A couple I've always liked are:
Diablo from....Diablo.
Midna from LoZ: Twilight Princess (kind of obvious
)
Kamui from Fire Emblem: Fates
"Jack The Ripper" from Metal Gear Revengeance
Lightning from the millions of FF13 sequels
AND FINALLY................THE GOAT

He's simple, but i think Link is easily a GOAT character design:
On that note, Ganon is also a great design.

Phalanx - Shadow of the Colossus. Works as a character and as the best stage in the game. Just awesome:

Blizzard probably has the all around best designs for their characters, I am a big fan of the diablo series.
