Would you run duck breast thru an egg wash if you were goin got fry it?

or would you batter with only the moisture from the meat or marinade in which it was sitting?

I'd do either buttermilk or an egg and milk wash. Seasoned flour. 350degrees to fry until golden and floating.

Make a little gravy to go with it.

You can and it will be fine. I usually do milk and hotsauce though for a little thinner batter
