Wild Goose...?

Does anyone have a good recipe for wild goose? I've got a few in the freezer and I figured this weekend would be a good time to cook them...just in case the storm leaves me without power next week.

Need more info...are they plucked or breasted? Are the Specks or some other species?

Good. Do this .Do not do anything else. It's awesome. An old Ville Platte area receipe.Use a dutch oven. Heat on the stovetop. Season the bird with Tony's or black and red peppers and salt. Add a few Tbls. of oil to the pot, and brown the bird on all sides. You must drink beer at this stage of the process. Remove the browned bird, and add 1 diced onion to the drippings.Cook 'till clear...add some fresh garlic and saute a bit. Note: you must drink beer at this stage of the process.Put bird back in the pot, add a link or two of really good smoked sausage, and here's the kicker, add 1 chopped, cored apple.Reseason with Tony's, or salt and the peppers. Add @ 1/2 cup of stock, beef or chicken, and put a tight lid on it. Place in a 275 degree oven for 2 1/2 to 3 hours. Either take a nap or drink more beer. Make some rice ...the gravy is awesome. The bird will be about to fall apart. Great stuff.

wifes cousin made boudin with his and smoked it with pecan wood....I was skeptical at first(esp. cause he was from TX), but that shite was awesome!!! I had to ceritfy it "cajun" for him!!
