Why are restaurant "specials of the night"

not on the regular menu? Server always says it is "excellent." You don't want to serve the good shite other nights?

Plenty are something the chef may have gotten at the market that morning that is otherwise not available everyday.

Could be countless reasons

Sometimes you can't get the meat or ingredients consistently. Or it might not make economical sense to do a bunch of prep work every day if you're only going to serve three or four of the dishes. Also, a lot of specials are the chef's ideas--trying new things.

Same reason the McRib is only for a limited time. No one would pay the exorbitant price for a usually lackluster product on a daily basis.

Often it is just marketing. Some folks expect specials and like to order them to feel special.

One place I go to has had the same off-the-menu specials for years. Even if they don't mention one, ask and they will make it. They're not really special at all. Just not on the printed menu.

Just to add another possible reason, I have heard from one of my managers, the Steakhouse used to work at, had a dish; Amazingly popular, they put it on the menu, it didn't sell.

It's not always stuff that's going bad, sometimes it's a chance for the chef to do something different.
