Something like a casserole that you bake in the oven and is quick and easy

Take some left over jambalaya
Add a béchamel and some cheese
Top it with crispy bacon.... and more cheese...
Bake it in a casserole dish
eat it.

Shrimp Casserole
Broccoli, Rice & Cheese Casserole
I made a taco casserole in my crock pot with chicken, corn, rotel, taco seasoning, enchilada sauce and spinach, which I added a package of the Lipton Taco Rice for the last 30 minutes that turned out pretty good.

As long as it's a proper red jambalaya that would work.

Damn. That sounds good. Like a pepper jack cheese.
I love cheese-stuffed boudin balls, so I'm sure I'd love jambalaya casserole.
