No troll here.
1.) reason I posted refrig option. I would be very careful. Clean everything meticulously. I use more booze. Makes higher than 40 proof for the base. No one ever got sick.
2.) this last batch took 20 min to incorporate the booze. Too fast and the eggs "scramble" from proteins denaturing. Dribble in w/ spoon.
REPEAT, if you are worried age it the frige-just not as smoothe.

The no refrigeration thing def makes me nervous but going to give it a try. Let the fresh made batch sit overnight in the fridge and had a glass last night. I added a little extra sugar, because my girlfriend has a huge sweet tooth and likes everything extra sweet and went really light on the nutmeg because I'm not a fan but otherwise followed it exactly. Verdict= delicious.

I made the Chow version last night. Let it age in the refrigerator until Christmas Eve. I had no idea you were supposed to age it.

Had about half a pint glass leftover from filling up a 2 gallon container. Let it get cold and put some nutmeg on it. Pretty delicious and strong. I'm sure it'll be much better after a few days aging and folding in the egg whites.

So, I checked on my base that I'm aging inside a china cabinet in my garage. Is it supposed to be BROWN??? I'm thinking there's no way I'm drinking this

Thats the color of my base. Both the refrig version and the not. Look, if gives you the willies just make the fresh or the refrig version. Both are way better than store bought

I made several batches and refrigerated, and they were great.
Too late to refrigerate this one, and honestly, I kinda want to see where it goes. But def a little nervous, just wanted to make sure it was on par, my refrigerated versions didn't look anything like this.
