I smoked hugeass pork loin a couple months ago and froze about a third of it because we coulnt eat it all. It was a brined, temp controlled, low and slowed pecan and hickory beast of a pork loin the first go around. I vacuumed sealed it and froze it. How should I go about thawing in out in a relatively quick manner?

Defrost in sink under running water.
Oven or maybe grill.
Not sure how it'll turn out but my prayers are with you and yours.

Best way is in the refrigerator for a day or so
If you are in a hurry and you said it was vacuum packed just submerge it in a sink of cold water, it will be ready to go in a few hours, then I would steam it in the oven , put in a foil pan, add a little water and cover tightly with foil and warm it up

30 seconds at a time in the microwave. 90 second pause periods in between. Pain in the arse but it works.

Leave it sealed. Drop it in a water bath. 140 or so.

I put them in warm water wrapped in plastic. Avoiding the water in direct contact with the meat.
