up in here??

I've been working entirely too much to post recently, but just wanted to share something I recently experienced in the Kitchen. We always share our success, but how about sharing failure??

I was frying Fish and ran short of Fish Fry, so I mixed in a box of Jiffy Cornbread mix to stretch it. NEVER DO THIS!!!!!!!!!! The sugar in the mix made the coating burn before the fish was cooked and the taste just didn't jive...............

my g/f poured an assload of cumin in our sweet potatoes the other week thinking it was cinnamon.

made gumbo last night, let it simmer for a few hours to get it ready for tonight.... haven't tried it yet, but I could have failed. I'm not 100% in the roux making business for gumbo

You have got to get your priorities straight

Jiffy is good for corn muffins only....makes an awful dressing...but it may be the key to VooDoo barbecue's corn pudding...can't imagine it as a fish batter...but hey...if you never try you never have a chance of inventing the next great dish....Have you gotten all the LSU gear for the grandbaby? Christmas right around the corner.

Was making homemade sensation salad dressing and after I put every ingredient except the oil. Went to the cabinet got some oil from the container and drizzled it in the blender. I tasted the dressing after finishing, and it was awful and smelled fishy. As it turns out, I used old fish frying oil. Gross!

made a jambalaya a couple of weeks ago. didn't let the sausage/chicken thighs brown/stick to the bottom of the pot enough; also, make a stock using chicken bones that i didn't roast in the oven (so the stock was clear as a bell).

combination of these two things created a jambalaya that was snow white in color and lacked that depth of flavor you get from a good browning/scraping of the bottom of the pot and rich stock.

regardless of what it tasted like, a snow white jambalaya does not in any way look appetizing....

Shrimp and Crawfish Pasta
Crab Mornay
Smoked Turkey and Sausage Gumbo

Hint, when cooking rice, drop a Chicken Bullion Cube in the water, don't add anything else. Turns out great.

Another hint: When doing a gumbo with sausage, take one link and put it in a food processor, chopped up fine. Adds to the flavor of the roux.

i have made this mistake before but i put cinnamon in some arroz con pollo instead of cumin. i kept thinking it didnt smell right but didnt think anything of it. the rice wasnt inedible, but it wasnt really that good either.

Don't complain. When I was dating my wife she bought some little scented potpouri balls thinking they were carpet deoderizing pellets. She sprinkled them on the carpet and tried to vacuum them up. Clogged the motor and had to throw the vacuum away.
