but not a lot of supporting ingredients. I really don't want to go to the store so need some help. What would you make? I'm thinking maybe a small batch of altered ham/sausage jambalaya, but no celery or green/red peppers

The basics I have in the pantry:
1 can tomato paste
1 can tomato sauce
1 can dice tomatoes
1 can black beans
1/2 can leftover kidney beans
1 can artichoke hearts
1 onion
Garlic cloves
1 jar marinara sauce
raspberry jam
apricot jam
2 avocados
2 tomatoes
Fresh spinach
White rice
Fettuccine
Angel hair pasta
milk

Go!

Do you have a meat grinder? Sounds like a chili could be in order, using the ground up smoked meats, the tomatoes and tomato sauce, beans, onion, garlic, maybe a teaspoon of that raspberry jam to give it a twist? Top with sliced avocado and diced raw onion?

^^chili was my first thought as well. Brown the onion, add smoked sausage cut into thin quarter-rounds (quarter sausage lengthwise, then slice across) & plenty of garlic, then proceed as usual with the chili powder, tomato products, etc. Add the two different kinds of beans after the dish has simmered for a while. Garnish each serving w/diced avocado.

Or, fine-dice the ham & saute in a little olive oil or butter. Add plenty of garlic, then add artichoke hearts (cut into chunks, drained if canned/jarred). Cook until the artichoke hearts are warm throughout, then add coarsely chopped fresh spinach. Stir until the spinach wilts, serve over cooked angel hair pasta.

Or, make a bean and sausage soup: brown onion & sliced sausage together, add garlic & a little cumin and chili powder. Deglaze pan w/the juices from the canned, diced tomatoes & some water, then add the diced tomatoes, black beans & kidney beans. Simmer until fragrant & slightly thickened. Make a chopped salad w/tomato & avocado to go alongside.

ETA: when I was in college, my roommate & I often had what we called "three cans"....which was nothing more than a can of Rotel (sub your diced tomatoes), a can of black beans, and a can of whole kernel corn, stirred together...we would add 1.5 cups water to the pot, heat to boiling, then add a cup of rice, slap on the lid, and reduce heat to low, cook 20 minutes. If we had it lying around, we'd add some taco seasoning, hot sauce, or whatever desperation college condiments lurked in our kitchen. It was damn filling and always made enough to eat for several days. It's kind of a bastard paella/spanish rice/faux jambalaya.
