I am going to light the charcoal pit today for the first time and cannot decide what the hell to put on there. I want to sit back and listen to the game so I really don't want to have to keep a constant watch over it as the constant flow of cold bud light and the attention needs of my little boy may be more pressing.
Any ideas from the peanut gallery?

chicken takes up the better part of a day...
or put you a ham or pork loin on there and smoke it, that don't require much attention...

Thought about the ham thing, also considering a roast, maybe a pre-sliced brisket.
Have you ever done a roast on the pit? If so, what is the time frame on this?

I'm doing 16 lbs of pork tenderloins for a party...I'd say go with pork chops since I'm in a swine kinda mood today. Quick, easy, and you can grill extras to carry through the week.

Sounds like a winner. Gonna stuff a pork tenderloin with some cream cheese and peppers of some sort and slow grill it. Been wanting to grill some bacon wrapped dogs or sausages so that is going to happen as well as some chicken thighs for the Mrs.

also considering a roast

Boston butts are great on the grill. May take 3-4 hours, but doesn't require a lot of babysitting.

Now the roast thing is doable too. Might do that as well for the next few nights meals.

Chicken leg quarters, light smoke, with bbq sauce. Put some sausage on there at the end to go with it. I also like to do beans in there too. The wife does a hot German potato salad to go with it. Where is my charcoal chimney.....

Here's an idea for cooking chicken and steak at the same time. I tried it last summer and it was great.
Cut chicken breasts into strips (the size of french fries) and marinate for an hour in whatever your favorite marinade is.

Get the coals hot (which is best for grilling steaks)..then put the chicken strips and the steak on at the same time. Flip the strips over at the same time you flip the steaks. They will be ready at the same time.

I prefer eating the steaks that day and then saving the chicken strips for fajitas or salads the next day.

I wound up doing some chicken thighs, hamburger patties and a couple of filet mignon's. Did some old fashioned baked beans and corn on the cob for sides; everything was absolutely perfect just like the day here.
Side note....told the Mrs. about March 14th...that is for dessert ! Hope everyone's day was as nice.
