frick the Jack links shite that every grocery store has, where’s the real shite? Not too salty, pretty damn dry and chewy. Best I ever had was from a truck stop in Oklahoma and I can’t for the life of me remember it

Elk jerky, thick cut. Woody’s Smokehouse in Centerville, TX serves it up every now and then.

Prasek’s Family Smokehouse in El Campo, TX also has some kick arse jerky.

I do like their beef jerky. Also, there's a place up the road in Needville with a heavily pecan smoked jerky that's quite tasty.

I also liked the Really Good Beef Jerky Store in Sweetwater, TX. I swear they had about 100 different meats and flavors too.

Operations similar in size to the above mentioned El Campo and Needville spots, Bourgeois in Thibodaux, Peto's in Roanoke and Rita's in Gotte's Cove/Iota.

Not really that hard to make if you opt to. You can use a dehydrator or smoke it to make the finished product.

I've done both and prefer the smoked version, but the stuff dried in a dehydrator is not bad either, just not smoky.

My preferred meat to use is an eye of round roast cut in thin slices across the grain, season and marinade it for no less than 24 hours, then smoke till done.

Pappy Kershenstein's is good, but you can't find it anywhere.

Stan's beef jerky is really good. Dry and chewy, the way God intended. The peppered and teriyaki are my favorite.

This is really good jerky. It's pork jerky though. I get it at Costco.

Was it named Hard Times? They make a hot jerky that is the best I've ever had.

That may have been it, it was in Stillwater I think on the way back from a trip. There was a big truck stop there that had great jerky.

I like the Loves Truck stop brand which I think is made by Robertsons, Dry and hard/chewy like one mentioned above.
