Smoked chicken thighs from Bergeron's in Port Allen....go to Jacob's World Famous Anoudille sausage get you some of the best in sausage for gumbo ever....get some breasts cut up into cubes and brown them very lightly so they don't get stringy in da gumbo and then your sausage put in oven for 30 mins at 300 to get da grease out the sausage....cut it up after degreasing and man u got a great gumbo...

Although for a quick gumbo sometimes I use a deboned rotisse chicken.

We grew up with a bunch of chickens. I don't believe we ever ate a hen. Only young roosters when they were old enough to tell they were roosters after they hatched. My dad always kept hens for eggs and 1 or 2 roosters to keep them fertilized.

precooked whole rotisserie chickens. They are $5 each at Costco.

I like to smoke leg quarters and use them. But I also like to be lazy and go buy rotisserie chickens from Sams and use the whole thing.

This will probably be unpopular here but I use boneless chicken breasts. Cut them up into fairy large chunks, salt and pepper them, and brown them before throwing it in the pot. Never had an issue with it getting stringy even after a few days.

i'm on this train as well. inevitably i end up with a bone fragment or 2 from a rotisserie chicken no matter how slow and carefully i debone it.

thighs are 'cut em up and forget it' foolproof.
