So I'm working on a new dish for late summer... I'm thinking a cold soba salad with a Thai backbone... golden coconut curry, peanuts, baby bok choy, maybe edamame?, fresh basil and mint salad, some kind of citrus powder... Possibly the peanut in powder form... Maybe just lime zest... I've been playing with gels a lot.. Maybe a citrus gel ... Any input?

I know zilch about powders or gels. Sounds like you're on the right track with those flavors. maybe work some white miso into the mix and some ginger and scallions.

The shrimp stock I made adds excellent flavor, if I do say so myself. It's got some heat, too. All in all, c'est bon!

damn Darla that looks epic. Bet there's ton of flavor there, considering the homemade shrimp stock and the fact that you know what you're doing in an apron.
