Waffle mix

Anyone have a go to waffle mix? Recently bought an iron and have tried a few brands w mixed result. Have actually preferred a pancake/waffle generic brand to date.

On a related note, I'd recommend not going with the cheapest waffle iron. Either not hit enough or not heavy enough to get that crisp I want.

I'd buy the big Bisquick box from Sam's and tinker with the recipe. That's what I do.

More sugar, a little cream instead of milk, etc.

You need the Belgium waffle type maker. The one that flips over while cooking. Also add malted milk powder and vanilla to your mix

Check out alton brown's good eats episode on waffles. Really good info on what type of waffle maker and how to make the batter

I am telling you go to sams and get the pioneer sweet cream pancake/waffle mix. Best ever.

I like the Aunt Jemimi original mix, but NOT the "complete" version that you just add water to. I only use the one that you add egg, milk, and oil. Some stores didn't carry it.

A lil different but try jiffy cornbread waffles they are very good with steens syrup and butter

Remember to add some fat and sugar to the batter. That's the biggest difference between Waffle and Pancake batter.

Yes, you add fat and sugar to the batter, I typically cut down both a tad, though. The key to this one, however, is the mixture of flour and cornstarch. The recipe makes only about 4 waffles in my iron, so adjust as necessary, depending on how many you want

Yeasted waffle mix

2 cups unbleached all-purpose flour
1 tbsp sugar
1 tsp instant fast-acting dry yeast
1/2 tsp salt
1 stick unsalted butter, melted
2 cups milk, warmed but not hot
1 tsp vanilla extract
2 large eggs, separated

Combine flour, sugar, salt, yeast together. Pour in melted butter, stir until it disappears. Stir in milk and vanilla. Cover and set aside at least 6 hours or overnight.

Just before cooking, stir egg yolks into the batter. Beat egg whites separately with a mixer until glossy.

Heat the waffler. Fold in the egg whites into the batter. Cook until golden, about 5-7 minutes.

Yeasted waffles are the best waffles. While it is more time-consuming than pre-made mix, the end product will surely pay off for you.
