USDA "Prime" marbling?

Is it me or has the "Prime" lost its definition.
I see some of these prices floating around like 9.99 a pound for USDA prime and it seems like its just not the same. I look at "prime" at Costco and it just doesn't seem to have nearly the marbling that prime use to have
Look at prime steak from Costco vs Calandros and the marbling is a world of difference

Had a prime ribeye from Calandro's last night and it was one of the prettiest steaks I've ever bought. I get meat at Sam's sometimes but have never seen anything purported to be prime there. But I wasn't looking for it.

You talking about like a whole roast or a single ribeye type of thing?

It has to have the USDA Shield to be correct. If not, and I have seen it, it is more that likely choice being labeled as prime. I have seen store labels call it prime with no shield and that is not correct.

It's probably on the lower end of the prime scale. Look at the Japanese beef grading system to see the differences in marbling.

RL Swift 1855 black angus, high end choice, has better flavor than prime IMO, not sure what retailer carries it. We get it at the restaurant through Halperns, a meat purveyor out of Atlanta.

It pricier than your standard choice but the extra dollar or two per pound is worth it.

To me marbling is a great quality to have in a cut of meat but fat content doesn't equal flavor.

HEB does this with their "Prime 1" beef.

I've even seen out labeled USDA Prime without the shield and that is not correct. Only 2 or so percent of beef is labeled USDA prime and given the shield. Mostly you steers is where the majority comes from.

I used to sit at the stockyards as a kid with my grandfather watching him buy and sell. He would say "too old. No prime." which was funny because they never ate steaks so he couldn't tell one way or another, but this was a long time ago and I didnt know what prime was and probably most people didn't either.

He would say, since he raised cattle in Concordia and Catahoula parishes, " been real dry in West Texas. Let's go buy some cows." that was his price barometer when they had to sell and prices went down.

The choice ribeye at Costco is 9.99 lb. If you saw prime steak at Costco for 9.99 it was their sirloin. They have a Prime ribeye cap for $17.
