Turtle Soup/Stew

I did a search for “turtle”. But after a few pages gave up. Who has the best recipe for turtle soup/stew? I have the Commander’s recipe, and a few others. Is there a better one? Finally broke down and cleaned two huge softshells i caught this past weekend. For past 10 years I just cut them loose because cleaning them is such a gigantic; stinking pain in the arse. But I did it, got a bunch of turtle now because I want some turtle soup.. I remember it is delicious; and I remember lots of onions and tomato. And beer. But that was years ago. Tell me your recipe please?

It's in the recipe collection available to freely download on the 2nd stickied post at the top of page 1.

If you have the Commander’s recipe, you are not going to get a better one than that.

It’s one of those perfect dishes. Hard to get any better than that.

I think I've only had it once and that was in a restaurant, Frankie and Johnny's over 40 years ago. I thought it was fantastic. Have no idea if it really was.

It's very, very good, but it's almost too thick to call it a soup.
