good Mexican buffet

No such thing.
Hell I can’t think of any Mexican buffet in business today to go to regardless of the quality.

Taco Bell.

Two chicken Chalupas now cost $12.

If you are going to Taco Bell for Mexican food, why are you not using the value menu?
Otherwise, go to a real Mexican restaurant.
You can get full for less than $6 at TB with a variety of choices and it's not bad food. No worse than what you get for a couple of chalupas costing $12 out of the same kitchen.

Sorry you don't have any good ones where you live.
There at least 3 really good Mexican buffets within a 10 minute drive from where I work. All less than $12.
Add to that 2 of the 3 have Queso dip included on the buffet.
Most places charge you $3-4 for a tiny bowl of Queso.
All 3 have steak and chicken fajitas on the buffet. Think about what a fajita plate costs? Add to that the variety of what you can get and it's a no-brainer.
And a buffet is no more gross than anything else you get served in a restaurant. If you sit down and order, the same people are preparing and serving your food.

Pho - A Vietnamese friend said that any place charging more than $7-8 for a bowl of Pho is robbing you. Most pho places now charge $12-$15 for a bowl of Pho.

Almost all Asian food is inappropriately overpriced. I travel to Asia often and if you’re paying more than $5-7 for any noodle dish, especially ramen, you’re doing it wrong. That’s the price in a restaurant. Street food, which is just as good is much cheaper.
As mentioned many lesser cuts of beef. Chuck-eye is almost as expensive as ribeye. Tri-tip, oxtail, etc. Most pork is still reasonable though.
Much fresh produce. Oranges are now over $1 each and most apples are in the $2+/lb range. Watermelons are crazy expensive as well as most melons. One of the things that are consistently cheaper are pineapples for some reason. I’ve been getting them for $2

Agree with previously posted beef short ribs. Used to be a cheap trash cut, now it’s priced as a delicacy.

Chilean sea bass. It was an unknown fish, priced so, and now it’s $30+ per pound.

Shucked oysters. A pint will make you wince.

Just got off the phone with Schaeffer's Seafood in Bucktown after inquiring about oysters by the sack.

Was told they sell mini-sacks that contain between 6-7 dozen oysters and the going price is $64 + tax===making it more like $70 a sack, or damn near $10 a dozen and you still have to open them.........

fricking insane.

I can’t imagine how bad the quality of the steak must be on a buffet.
Think about what a good fajita plate cost at a normal place and now think about a $12 charge for a buffet. And the business isn’t going to lose money

King's Wok on Jefferson has lunch specials for well under $10 after tax. Enough food for a couple meals too.
