I haven't been on the f&db in a while, but wanted to invite everyone to my smokehouse. We opened up back in December and we are still getting structured and organized while we remain producing awesome bbq and other meats. We are located at 6779 US Hwy 61 in St. Francisville. I have been cooking since I could walk and still learn new things everyday from this board. Bought some great ribeyes from there a few months ago and always stop by on the way up to the lake.

I don't think you get how this works.

You have to come here all pissed off and be snarky to everyone, then start talking shite on twitter about how this board is like amateur cooking hour and everyone on here are hacks.

Then you need to burn a minion in your smokehouse.

Had lunch there today. Brisket plate and half rack of ribs. Corn pudding, fries, beans and sweet potato waffle fries. Little starters of pepper jack boudin balls (close to Billy's-boudin slightly less spicy) and some of the best chicken livers I've had. Ribs were tender, but not falling off the bone, which is how I like them. Beans with bacon and ground meat FTW.

Everything was really good, and portions were generous. I like that the meat is smoked, but not covered in sauce, rather it's served on the side. Vinegar based, it was bang-up on the brisket, didn't put any of the ribs (I'm sauceless on ribs in most cases anyway). The staff were all very friendly and helpful. The new building next door looks like its going to give them a lot more space for seating and is close to being finished. Will definitely make another visit.

Yeah, we stopped at the antique shop in Jackson on the way back, and the owner told us they had all had that lunch special. She termed it a flavor explosion, said they often get specials from there, and that they are very gourmet for a country smokehouse.

After movingly from Texas, I can assure you that Louisiana is a BBQ desert!! Sorry but fact. However, the Francis Smokehouse is an exception. They do a great job with ribs, pork & brisket (true measure of bbq). All their sides and cuts of meat are great plus their sausage fantastic. This might be a secret for some but their fried chicken is off the chain good.
