Sweet Potato Hash: Gameday Edition (Recipe + Pics)

On this gameday morning, wanted to share a recipe that I love to cook on the weekends with leftovers from the week. It is incredibly easy, healthy, and most importantly delicious.

I would put this on par or above any brunch meal I could get if I went out to eat. While I will post the recipe, it is better served to just use whatever leftover vegetables you have in your refrigerator. The keys are a sweet potato, a meat source, eggs, and leftover vegetables.

Ingredients:
1/4-1/2lb ground meat (I used hot italian sausage)
1/4-1/2 Sweet Potato (grated)
2 eggs
Garlic
Yellow Onion
Brussel Sprouts
Red Bell Pepper

Directions:

1) Preheat the oven to 400 degrees. Cut sweet potato in half and use a peeler to remove the outside skin. Once the skin is removed, grate the sweet potato by using a cheese grater. Catch the grated sweet potato with a paper towel beneath the grater set aside.



Place the grated sweet potato in a bowl. Add melted coconut oil along with salt, pepper, and garlic powder.



2) Chop all remaining vegetables on a cutting board.



3) On the stovetop, prepare one skillet and one cast iron skillet. In the regular skillet, begin browning the ground meat. In the cast iron skillet, begin heating coconut oil (or other oil source).



4) While the ground meat is browning in skillet 1, add garlic/onion to the cast iron skillet with the coconut oil in it. Brown the garlic/onion for a few minutes.



5) After garlic/onion has browned, add remaining vegetables to the cast iron skillet and cook for 5-8 minutes. Remove skillet 1 (with the ground meat) from heat source.




6) After all vegetables have browned, add the ground meat to the cast iron skillet. Cook for 60-90 seconds.



7) With a spatula, create two "craters" in the meat/vegetables. Crack an egg into each crater.



8) Place cast iron skillet into the oven and cook for 5-8 minutes. When eggs are cooked to your desire, remove from the oven.



9) Top eggs with red pepper and serve immediately with fruit/coffee.

Looks wonderful! I love it when something great comes together from using up some of the things you have on hand.

I make that with bacon instead of ground meat. Ground meat does sound good though

Nice job. I like the idea of finishing it in the oven. Also like the use of brusselsprouts. I like to make hash with left over smoked chicken or pulled pork.
