Recipes with Coriander:

Interesting facts:

Also called Spanish cilantro

Native to Middle East and Mediterranean

Fresh citrus taste, often used in sausages, curries and pastries

Stalks, leaves and seeds are all edible

I use this in just about every creamy veggie soup I make (Spinnach/fetta, cauliflower, broccoli, etc). It's fantastic.

Anything you desire. I'm using the tan colored seeds, though. It seems that is typically what people mean when they make a generic reference to "coriander."

Did grilled chicken thighs in a coriander rub tonight. They were fatty as hell, even after trimming as much as I could. On top of that, the Mrs. is skeptical of thighs and wanted them extra seared. While the taste was great, the extra crispiness from the searing / rendering process causes me to withhold any pics

But the coriander / paprika / cumin / turmeric / honey / ginger / cayenne rub was excellent.

By the way, I agree with this description (at least so far):

If Garam Masala and Gochujang are an electric guitar, Coriander is a tambourine or a bass drum. While noticeable, you really have to pay attention in order to delineate it from everything else.

I broke in my new instant pot last night with some black eyed peas.

1 Bag of dried black eyed peas
1 package of extra firm tofu, cubed to 3/8"
5 carrots, chopped
1 onion, chopped
1 red bell pepper, chopped
a few cloves of garlic
Low sodium vegetable stock
1/2 pint of amber lager
1/2 Tbsp paprika
1/2 tsp ground coriander
1 tsp garam masala
1 bay leaf
splash of ground smoked habanero
Splash of fish sauce

Threw it in the instant pot on the 30 minute bean cycle. Great meal for a chilly night.

That looks good - IWEI. I like the black eyed pea soup theme for the cold snap we currently have. Thanks for the inspiration.

I tried this chicken pho recipe tonight. Came out alright. I was timid on the fish sauce and it showed in the end product.

ETA: I didn't have any fennel seed as called for.
