Soft Shell Crawfish

One of my favorite old places to eat was a place in Jackson, MS called Nick's. Nick's closed about a year ago, after 30 years in the business of cooking stuff I loved to eat and serving it white table cloth style.
At least for a few weeks each spring, Nick would feature fried softshell Crawfish on the appetizer menu and more than once, I asked for a double or triple order, served as my entrée. They always obliged and I was always happy. IMO there was nothing better than the dish with a mild lemon sauce - Happy memories.

I wish I had access so I could do a photo spread, but good luck even finding decent crawfish in Meridian. Forget finding softshell critters to work with.
So, my question is this. Where (restaurant) can I get some of this several weeks in the spring delicacy?
No one ever mentions these. Have you guys ever tried them?
