Pro boil+liquid crab boil until you sniff the water and tear up or turn away. Boil, drop shrimp, after few minutes cut it off. When? You'll know when, then cool. And easy.

Hey Hat, what is that stuff that they put on the shrimp to flash freeze them on the refrigerated boats? I have been told by Grand Isle locals that it makes shrimp hard to peel. Ever heard of that?

This is the way they do them at Mike Andersons...they always come out warm and easy to peel

I've boiled shrimp for 40 years and this is my method.
Boil them for ONE minute...not 3.
Then let them soak for 4 (they will still be cooking in the hot water as it cools).
Then dump in the sink and start peeling. They're not as hot to handle and the shell comes off easy.
This is essentially a 5 minute cook with gradual reduction of temperature.

not sure but maybe liquid nitrogen. if you pass by many shrimp sheds their huge tanks of it every where.
i've worked on a few shrinp boats and the boats i worked on all used normal ice to ice them down in the hole even on long trips
