Braise it in rosemary, and stout with some beef stock. Wrap in tin foil and place it in the fridge with something weighing it down. Unwrap the next day, cut into cubes, deep fry.
You can even make a sauce with the same ingredients you cooked with and reduce it down with some basalmic or brown sugar.
Granted you make die of clogged arteries if you are over the age of 30 but it is totally worth it.
