Pancake Pantry is one of my favorite restaurants, anywhere. They have phenomenal pancakes of every possible variety as well as unique sandwiches, soups, and burgers that can't be found anywhere else. I'd eat there for every meal when I'm in Gatlinburg if I could. My favorites are the Polynesian Delight sandwich and the Caribbean pancakes (no coconut) with peanut butter syrup.
If you go through Knoxville don't pass up Littons. Their burger with the pimento cheese is the best burger I've ever eaten.

If you're driving from Louisiana, detour off the Interstate to the old highway in Madisonville, TN on the way to Gatlinburg, stop at Benton's Hams, and load up on as much bacon and ham as he will sell you.
going there in a month. This is a must do side trip.
