Cooking Opelousas chicken for the first time today. What do y'all recommend for sides to go with it?

I would go with potatoe salad, fresh garden salad, and pistolettes

That sounds good. Didn't even think about potato salad.

the paprika and chili powder gives the chicken a smokey , barbecue flavor so the potatoe salad complements it well...

fresh purple hull peas and fresh corn on the cob. That is my two side dishes for the bbq'ed chicken I am putting on the grill in about an hour. Neighbor is bringing potato salad and I will slice a few homegrown tomatos and drizzle a little olive oil and balsamic vinegar on the with salt and pepper.

Just about to make a nice cocktail and light the pit.
