I think you missquoted me. I only used 1/2 cup of heavy cream in my dish for two people.

However, this is a recipe. Mike-da-Tigah can use more heavy cream in his Shrimp Grits if he likes and that makes him happy.

I am so sorry - after writing this, I remembered the cup of cream in my grits. MdT can use more cream in his grits if he likes. He can also add cheese if he likes.

This is America and he can do pretty much whatever he likes if he has the money to do it and I bet he does because he posts on TD which is pretty much a High Roller website.

You misunderstand.

Mike believes NO CREAM should be in Southern Shrimp & Grits.

He and Powerman had a little battle over this in the last shrimp and grits post.

I will go back and read that when I have time - Only read the first page and it got hot quickly.

+1. I am a bread fiend. And that includes liquid bread (beer). I'm dropping weight quickly since giving up carbs for Lent, but B&B are likely the biggest contributors...

Good stuff. I like your attitude towards cooking. It's America do it the way you want until they pass some law otherwise.

I don't always add tomatos, or cream. I make it at the camp a good bit and we just don't think about stocking heavy cream in the fridge. Try them over a grit cake, not something you'll want to do every time, but it does change up the dish.

There is a place we eat in Florida that does them with breaded fried cheese grits that is really good. I may do them and make a photo post with the fried grits

I make mine very similar to yours but I mix it all together in a casserole dish with shredded cheddar on top and broil until brown.

Looks great man. Thinking about making this tomorrow when I see my parents. How many lbs of shrimp did you use? Gonna make this for a family of 4.

I would count shrimp per serving and do it that way. It is your family so if the shrimp are a good size I would give each person maybe 8-10 shrimp. For four that might be 40 shrimp. Maybe 2 1/2 pounds.

I do my sausage by the piece also and keep the sausage pieces fairly small with maybe 8 pieces of sausage per serving.

I like lots of grits in mine and I like them thick. Obviously the grits are filling. I'm a big guy and that serving with bread was very filling.
