Mine is a pretty basic Carolina mustard sauce.

1 Part cider vinegar
1 part yellow mustard
dash of homemade smoked pepper
dash of bourbon
Cook down a little bit.

ketchup
onion
garlic
lemon
worcestershire
salt
pepper
butter
brown sugar

-Saute a couple slices of onion and minced garlic in butter
-Add about 2 cups or so of ketchup
-Cut 1 lemon in half and squeeze both in sauce. Throw halves into sauce after squeeze
-Add few splahes of worcestershire, couple spoonfuls of brown sugar, salt, pepper to taste
-Let simmer for 30 minutes or so

My wife likes Blues Hog Tennessee Red on pulled pork and ribs. Sometimes it's a pain in the arse to find, so I use this recipe: Youtube Link

2 cups prepared yellow mustard
2/3 cup cider vinegar
3 tablespoons tomato paste
1/2 teaspoon of your favorite hot sauce
3/4 cup sugar
2 teaspoons chicken bouillon granules or 1 cube
2 teaspoons dried rosemary leaves
1 teaspoon celery seed
3 teaspoons mustard powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon table salt
1 teaspoon freshly ground black pepper

Carolina Vinegar Sauce - great accent on simple hickory smoked pork shoulder.
– 1 quart Apple Cider Vinegar
– 2 Tablespoons Kosher Salt
– 2 Tablespoons Crushed Red Pepper flakes
– 1 Tablespoon Black Pepper Ground

Ketchup base - excellent on ribs
1 cup ketchup
2/3 cup seasoned rice vinegar
1/2 cup apple juice or cider
1/4 cup apple cider vinegar
1/2 cup packed brown sugar
1/4 cup Worcestershire sauce
Juice from a lemon
2 teaspoons prepared yellow mustard
3/4 teaspoon garlic powder
1/4 teaspoon ground white pepper
1/4 teaspoon cayenne
1/3 cup bacon bits, ground in a spice grinder
1/3 cup peeled and grated apple (I've also used apple sauce in a pinch and it works really well too)

White BBQ sauce:

Ingredients
1 1/2 cups mayonnaise
1/4 cup water
1/4 cup white wine vinegar
1 tablespoon coarsely ground pepper
1 tablespoon Creole mustard
1 teaspoon salt
1 teaspoon sugar
2 garlic cloves, minced
2 teaspoons prepared horseradish

Use this with pulled pork on a kings Hawaiian bun and thank me later.
