Sensation Salad Dressing

Does anyone have a good recipe for a sensation salad dressing?

1/2 to 3/4 lb. of finely ground Peccorino Romano cheese
1 pt. of olive oil
Juice of 3 lemons
4 tsp. Of balsamic vinegar
6 cloves of garlic, pressed with pulp and all juice
Very cold iceberg, romaine and mixed baby greens
Blend all ingredients together in food processor. Toss greens together to mix well. Add dressing and toss gently to coat each leaf of greens. Salt and pepper (Fresh ground is preferable) to taste. Serve on cold plates.

I tried this one the other day:

salt and black pepper to taste

Perhaps he wasn't trying to be a dick, but rather give you a better answer. Since this isn't the OT where people try to best each other, I often supply links here to other buried threads if I know how to find them.

It had some recipes in it. I just wanted to show that this has been an ongoing quest.
BTW, we're in danger of losing this tradition. The only restaurant I know of that has it on the menu is Portobello's and it's not very faithful to the original. Chef Don Bergeron has it on the takeout menu almost daily but he makes it up in big batches with the dressing and it sits in the dressing until it's a soggy mess.

What is the history of this? I don't see it outside of Baton Rouge? Love a good one though. Roberto's has/had a good sensation salad.

If you go to Calvin's over in the section by the chicken salad, there is a section of stuff made by Shelby's Catering. Her Chicken Salad is really good and so her sensation salad dressing. There is other stuff of hers over there like the Pimento cheese that I haven't tried, but I am sure it's good too.

The Little Village makes a good sensation salad as well.
