Resting a brisket question

I've got a delicious brisket coming off the BGE and will need to cooler it for a while. I've got it wrapped in butcher paper at the moment.

Should I leave it in the butcher paper? Or unwrap it and rewrap in foil?

No leave in the pink butcher paper. However get 2 Beach towels and wrap tightly. Place in cooler for min 2hr.

Yep. Towels and cooler. I am resting a pork butt and brisket right now.

I foil the brisket at the end of the cook.

When it is done, I wrap it, foil and all, in a towel and put it in a foam ice chest that barely holds it all. It will stay hot as hell for a few hours, and the time in the chest works some magic on the meat.

So I say leave the butcher paper on it, and wrap it up with a towel or a bunch of newspapers before you put it in the chest.
