Red beans stove top, cover or not covered

Possibly both. Depends on how much liquid you have and how much you want to reduce / thicken your beans.

Makes sense, I'll simmer covered for a bit and uncover till tender.

I cover until beans are cooked, mash some to help with thickness and then simmer uncovered until I get the desired thickness.

I soaked them overnight, they are tender after about 1 and a half hours cooking. Covered 10 mins, then light skimmer.

Way faster than I thought.

Eta. Put on low for an hour to thicken them up.

Oven at 300° with lid on for 3 hours. Remove, take off lid, and reduce on stove top until it gets to the consistency you like.

I soak overnight, cook uncovered. Sometimes I need to add water, but usually I have it down pretty good without the lid. Most of the time I don't need to add any liquid.

Kids that went to Mayfair Elem & Kenilworth Middle don't know how to cook red beans. ;-)
