Question for the Food Board

Forgive me for not knowing. But wife and I are watching Chopped and they used Chaudin. Reaction is "wtf is Chaudin?" Googled a bit and keep getting basically what is boudin.

Can you guys explain the difference between the two? I've never heard of Chaudin.

Chaudin is the stomach of a pig stuffed usually with sausage, also called ponce

It's a stuffed pig stomach. Boudin is sausage made from meat, liver, and seasonings.

It's the same as a Tom Thumb or a Dan Doodle.

Build a gravy around it after smoking it. Someone here told me that and it came out great over rice.
