It's a much debated issue within the state. A large portion thinks you should season the shells. That portion just happens to be located closer to TX.

On one side I'm just because you are from South Louisiana, Italy, Mexico, China, does not mean you can cook cajun, italian, mexican, chinese.
On the other; this whole aspect of boiling and soaking vs cooking and dusting vs steaming and dusting is as dumb as "i kno wyou are but what am I" arguments. Ive seen people from the Mecca of culinary areas not know what the hell they are doing. and i've seen city boys who are more outdoorys than the redneck/coonass who lived in the woods/swamp.
In short, just because you are from somewhere doesnt mean you know what you are doing.

Yeah I have said it before that my ville platte buddies did it both ways. They boiled it in seasoned water but also put them in an ice chest and let them steam with some extra seasoning. Tasted just fine.

I agree, I was just pointing out that it's not really a people of Houston issue.
ETA - I'd also add that generally crawfish boiled on a large scale aren't as good as small batches done in a backyard crawfish boil. That doesn't mean there aren't good places, though.

why are people so picky about how their crawfish is boiled and seasoned, yet don't boil their own?
it's hard to take you complainers seriously when it's such an easy and cheap solution. unless you just can't boil or season them properly yourself.

There is a guy from Lake Arthur that has a place in Deer Park, I thought they were really good.
I like them boiled in very well seasoned water, soaked, but I also don't mind a light dust on the outside. As long as it dissolves away and you still have pretty shiny clean crawfish to eat. Good flavor, juicy, easy to peel is all I want. How you get there is up to you.
