preparing a breakfast casserole?

My wife wanted me to post this:

"I need to prepare a breakfast casserole type dish (crawfish or shrimp grits, or eggs with all the fixings...) but I want to have everything fixed and ready in the pan and then heat it up when I am ready to use it. We are going out of town to visit the in-laws and all I want to do is just take the cover off, pop it in the oven and it be ready. What is the best way about doing this?"

How about a frittata? It can be served hot or cold and made with pretty much anything.

my mom has an AWESOME recipe for a breakfast casserole...i'll have to give her a call and get the finer points, but i will be sure to post later with the details.

Here's one for you-

Easy Cheesy Bacon, Eggs, and Potatoes

Yield: 6 servings
2 pkg (11.5 ounces each) STOUFFER'S® frozen Potatoes au Gratin, defrosted*
6 strips bacon, cooked, drained and crumbled
5 large eggs, lightly beaten
2/3 cup (about 2 1/2 ounces) shredded cheddar cheese
1/4 cup chopped green onions
Procedures
PREHEAT oven to 350° F.
COMBINE potatoes au gratin, bacon, eggs, cheese and green onions in a large bowl; transfer to 8-inch-square baking pan.
BAKE for 40 to 45 minutes or until knife inserted near center comes out clean. Season with ground black pepper.

i think this will do it:

sunday morning casserole-paula deen

2 slices white bread pinch of pepper
1 lb ground mild sausage 1 1/2c thin sliced,
6 eggs beaten cooked unpeeled red potato
2c milk 1 1/2 cups combined grated,
1 tsp dry mustard cheddar and monterey jack
1/2 tsp salt


cube bread and put in greased 8by 11by 2 casserole
cook sausage til almost done, drain
mix eggs milk dry mustard salt pepper
layer sausage over bread top with layer of potatoes
sprinkle cheese
pour egg mix over casserole
cover fridge over nite
in am bake 350 for 30 until set

there is one also in one of the river roads called about the same 'overnite breakfast casserole'

RR 2 pg90 my mom has this one marked in her cookbook basically the same

egg and sausage breakfast dish

1lb cooked drained sausage 1 tsp dry mustard
6 eggs beaten 2 slices cruched day
2 c milk old bread
1 tsp salt 1 c grated cheddar
3 tbl sp chopped onion

mix ingredients and sit over night in 11by7by1/2
pyrex dish
bake 350 for 45 min serves 6 (like the other one)

one more! go to holly clegg's web site and click under recipes the 3rd cookbook from the end of page will list "shrimp and cheese grits casserole"...i have made this and its easy and GREAT!
