Pre-Father's Day grilling, another reverse sear thread

This is my 3rd attempt to do this. First time, the results were perfect (posted on here). Second time, (not posted on here), results were mediocre. I overcooked my steak.

Third attempt, you be the judge.

Ingredients:

1 Porterhouse, Thick arse
Sea Salt
Fresh Cracked Pepper
Beer
Time

Directions:

Pre-heated oven to 275 degrees. Seasoned steak with sea salt and fresh cracked pepper. More salt than you planned is better than less than you should.









45 minutes later ...



Steak was allowed to rest for 18 minutes, 3 minutes longer than I intended, but you can blame my dog for that. She had to take a bathroom break.

Time to make the move to outdoors. Fired up the grill and cracked a cold one, while enjoying this steamy afternoon by the pool.












Seared 1 minute and 30 seconds on each side.




Plating. Nobody is here for the greens.




First cut. First bite.



The result? For me, it was one of the best steaks I have ever cooked.

Good looking steak, got that same grill on my outdoor kitchen we just built a few months ago

Only about 4 minutes of active cooking time. More time to drink those cold Rocky Mountain Coors Lights, baw.

It is literally 2 minutes of extra work if you are used to only using the grill. If you're used to going hot cast iron/grill to stove, ala Alton Brown method, then it is no extra work.

Try it once. If you do it correctly, you'll enjoy that steak. All you have to do is plan ahead for serving time. That's it. There's really no more work to it than searing it on the stove or the grill. In fact, you cook it less during that part of the cooking time in my experience.

Now, if you're cooking a half inch steak, don't bother.

Love that kitchen and pool, Will. I might have to get an awning, though when the sun is coming all up in there. Made me hot looking at the grill with the sun shining on it.

ETA: And, did you eat the whole thing?

The only thing that'd make that steak better is if you would've used a cast iron skillet instead of fire.

It hasn't been an issue for me, mostly because my back is against the sun when cooking.

Yes, shared between two. Only the bone left.

I would accept that bone. I bring them home from restaurants for private dining. I love chewing on the bones and this is not OT material, so no one start that garbage!

Edit: Gris Gris, that is a perfectly lobbed Chris Paul alley-oop just over the rim. But I'll resist ..

For me I like cooking that way but one of my reasons is to allow the meat more time in the smoke on my primo. Looks good!!

nice place, all that is missing is an apparatus that can get you a better sear on that steak. BGE or a primo
