Potato Salad Recipe

I’m serving gumbo to a group. Trying to act Cajun and make a potato salad too. I looked through the recipe link and couldn’t find a potato salad recipe. What is your favorite?

I use Donald Links recipe for gumbo potato salad and it’s always a hit. I like a super fine dice on the celery and onion, or even shred them on a grater.
Ingredients
2-1/2 pounds of Yukon Gold, Red or Russet potatoes
1/2 cup of finely minced onion
1 large stalk of celery, chopped
1 green onion, sliced
1/2 tablespoon of dried parsley
3/4 to 1 cup of mayonnaise
1 tablespoon of spicy Creole style mustard
1 teaspoon of kosher salt
10 turns of the pepper grinder
Paprika to garnish, optional
Instructions
Peel and cut potatoes to a small dice. Boil until tender and crumbly, about 20 minutes. Drain and set aside to cool. Place into serving bowl and use a masher to partially mash them, leaving some chunks.
Add the onion, celery, green onion and parsley to the potatoes; toss. In a separate small bowl, mix together the 3/4 cup of mayonnaise, mustard, salt, and pepper; spoon over the potatoes. Toss again until all the potatoes are coated, adding additional mayonnaise to reached desired consistency. Taste and adjust seasonings as desired. Sprinkle top lightly with paprika, if desired.

Damn that recipe looks good, I’d probably add a little more mustard but that’s just me

I quit making potato salad and just get the New Orleans style potato salad from Rouse's. That is the best potato salad I have ever had..

I usually add some dill pickle relish also.

A couple unique ingredients to possibly use: Pickle juice, Slap Ya Mama type mix, creole mustard, tabasco.

Boil your potatoes in some seafood boil seasoning to give it a good flavor from the very start. I've been making my potato salad like this for ages and everyone who eats it, loves it.
Of course I also add finely diced onion, celery, homemade bread & butter pickles, dill pickles, some finely diced salad olives, green onion, parsley, mustard, lots of mayo and diced eggs.
Never much need to add salt or pepper when using seafood boil to cook the spuds.

That tends to be a VERY regional thing. What part of Evangeline/St. Landry/Northern Acadia Parish are you from?

10lb bag red potatoes, peeled and diced about 3/4"
-Dozen eggs boiled and peeled, yokes separated from whites, whites should be diced into 1/4" pieces.
-16oz Blue Plate or Hellmans Mayo
-3 TBS Yellow Mustard
-Salt
-Pepper
-Dill Relish (optional)
-Garlic Powder (optional)
Boil potatoes in salted water for 20 minutes or till fork tender. While potatoes are boiling put mayo in a large mixing bowl and stir it till its smooth. Then add egg yolks and mustard to the bowl and smash the egg yolks with a fork and mix together (if you want dill relish in it, add it at this time). Add a little salt and a good bit of black pepper. I also like to add a sprinkle of granulated garlic . At this time add your diced eggs. When potatoes are cooked, drain and add them to the bowl mix together and serve.
ETA; I'm not sure on the amounts of Mayo, I just go by looks. I'm pretty sure it's near half a jar though.
