I'll often use leftover meat from my fried turkeys to make the filling for pot pies. The trick is to not make it with a thin sauce or it doesn't work near as well.
The vegetables, meat and sauce have to be pretty thick so the shell cooks good, especially the bottom shell if making a traditional type pie.
I have use puff pastry just to top the oven ready bowl and made them like that and they are a good, quick alternative as opposed to making pie dough, rolling it out and putting it all together.

I made this French Inspired Chicken Pot Pie for one of the challenges. It was delicious! Your post reminded me I should make it again. I loved that it had tarragon. Really upped the flavor.

I use leftover ham and make a broth with the ham bone to make a ham and egg pie. Pretty similar to chicken pot pie but it has ham and egg as the protein and doesn't have the veggies of a chicken pot pie

Mom makes chicken pot pie filling and then serves it over toasted biscuits split in half. Easier than a true pot pie.
