Never been big into jambalaya. Seems to be the go-to to feed a lot of people here in South LA and I find it's overdone and not that great to begin with.

I see that it's overdone, and a lot of times they really cut back on the meat to cut costs. (which aren't that high to begin with) But a good Jambalya, is just comfort food. Love cooking it, love eating it.
