Pit Barrel Cooker initiation

Just got a Pit Barrel Cooker for my Father's Day present. I will be firing it up tomorrow. Should I initiate it with a brisket? Any other recommendations?

wipe down the inside of the barrel good with lard and burn it in first
will give you a good seasoning that will help prevent rust

Awesome, thanks. I have not got around to reading the stuff that came with it but I was going to check and see if there was any break-in or seasoning to do. Any other tips are appreciated.

Start it the way they say to and then leave it the hell alone

It runs at higher temps than a normal smoker, just let it ride and trust it.

Got the rub on the pork shoulder and brisket last night. Trying to shake the hangover headache from the game last night then going to fire it up. Anyone try bean recipe from their website? I hope there is enough heat in the charcoals after the meat heats temp to cook the beans, corn, and finish the wrapped meats. Guess I could always add charcoals if needed..

Sorry for the rambling, brain not firing on all cylinders yet

I've never seen one in operation personally but my cousin in Dallas is always sending me text pictures of stuff he smokes and what he does on it looks amazing.

I would have just smoked the pork butt just to see how it cooks. Brisket is always going to be tricky anytime you smoke it, but as a first cook on a new cooker, that makes it even harder to get right.

Brisket was easy the first time on the barrel. Just got to pay attention to the brisket temp. It's pretty hard to screw up using the Pit Barrel.

Friend has one. Everything he cooks is excellent and he's not a cook, griller or smoker. I'm thinking of getting one.
