No legit restaurant/boiler is buying sacks of peelers and mixing them in. In fact a bunch do the opposite and mix in selects.

I tried Rouses and seem like peelers are mixed in on Airline/highland.

Rouses is selling field run. It’s how they sell them significantly cheaper. But field run isn’t “peelers”. It’s just everything that’s in the trap - big and small.

I tried Rouses

May have the worst boiled crawfish I've ever eaten. Always have several dead, smashed crawfish along with vegetation in their boiled crawfish. I witnessed crawfish being dropped straight from the sack to the boiling pot, they weren't even cleaned.

They call this field run and farmers do this when the prices are like they currently are because no one is going to pay a premium over current prices. They're just not grading them closely or at all.

Field run crawfish are available all the time
this isn't some special thing farmers do for the circumstance

No shite? What I’m saying is that there’s less motivation to do the extra work now than when you can get a premium for selects. I know guys who only offer field runs but I also know those who almost exclusively do selects. Those who are catching now are selling everything they can as fast as they can.

Peelers: smaller crawfish boiled and peeled for tails meat only. usually smaller and cheaper.
Look up "crawfish grading" system.

There isn’t an official grading of crawfish. But typically the peelers are smaller/juvenile crawfish that get sent to processing plants. Some of the ponds will throw them back and let them grow, but some send them off to be processed - peeling and packaging them. Hence the name “peelers.”

Field run/straight run they take out of the trap and dump in the bag. The sizes are all over the place from large to tiny and even the few dead that were in the trap. An easy way to tell if they are field run is if they have “junk” in them like grass, or bait, or turtles, etc.

Yep. You can find all kinds of shite in field run sometimes even snakes.

Some places will lightly sort their field run and take most of the junk out. Those are normally the ones where they are bagging back on land instead of right in the boat.

Each rouses is probably different depending on who’s working. Some probably care a little more than others.
