Need recipes for a venison roast.

I like to put them on a water smoker and cook it medium rare.Trim it well and season by rubbing well with olive oil, salt and fresh cracked black pepper...lots of it. Add some onion and garlic to the water in the smoker...I'd add a lemon or 2, some worchestershire and hot sauce, too.Smoke with charcoal and some good hardwood (I use pecan alot). You could use a marinade before smoking, but if it's a fresh cut, I wouldn't.

Whatever you do let the roast soak in ice water (in a ice chest) for at least 2 days. This will eliminate the gameiness from the meat. Then cook as you want.
