Need advice: charcoal

So I have been getting into grilling a lot lately, but I am having issues with charcoal temperature. Unless my thermometer is broken on the grill, it never gets over 200 degrees. I have searched all over the internet for tips on how to get it hotter, and can't find shite. I am using about 20-25 briquettes I guess. Do I just need more?

1 what kind of grill?

2 if its only 200 degrees, how does it feel on your hand? you can usually tell if you're thermometer is off.

20 to 25 briquettes doesn't sound like enough unless you have a pretty small grill. To be thorough, you can boil some water and place the probe end of your thermometer in it to test its accuracy. Like others have said, ditch the briquettes and switch to hardwood lump.

It was given to me I don't know the model or anything. It's about 18"x36". I'm using kingsford match light. I'm happy to try other stuff if that kind just sucks.

I bet the thermometer is either fried or is in need of calibration.

I second the advice to switch to lump charcoal and will also add to clean out the firebox so that ashes don't impede your airflow.

You think they gave it to you since they couldn't get it above 200 degrees?

I leave it open. Really only close it to check the temp.

What are you doing with the vents? Are the top and bottom vents all the way open?

A charcoal pit is a thing of beauty. Think of your cooking time as a delicate art of foreplay that leaves the ones you serve with a continuous tingling feeling to come back for more from your pit. Once you conquer the art of not only getting, but maintaining the warm temperature you desire to properly grill your meat, the world is your oyster.

Ditch the Matchlight bro. Lump is very nice. Make sure it's cleaned out good and gets plenty of oxygen. If the thermometer you are referring to is on the pit and not a good aftermarket digital, chances are really good that its reading wrong. I've heard they can be 50-75 deg's off straight out the box.

It's pretty easy to find it. Even places like Lowe's and Home Depot carry it. If you are in Baton Rouge, go to either Shoppers Choice or Goodwood Hardware and look for Ozark Oak.
