Mushroom Stems in Stir Fry

Tonight, I made some simple stir fry for dinner. Chicken thighs, green beans, various peppers, an onion, some mushrooms, garlic, gochujang, and some bottled teriyaki sauce. Nothing complex, but i enjoyed it.

Anyways, I ordered my groceries for curbside pickup this week and noticed that the button mushrooms they gave me were really big. Like, REALLY big, almost fist sized. I cut some of the stems up into chunks and added them to the stir fry and my wife (no pics) nor I could tell the difference between the chunks of chicken thigh and the mushroom stems. The caps were obvious but the stems were completely indistinguishable from the chicken.

Maybe I fricked it up, but it's got me considering using mushroom stems in stir frys or in place of ground chicken when it's convenient going forward. Anyone else ever have something like this happen?

There's actually a mushroom called chicken of the forest that you could also use.

Mushroom stems can be firmer(based on variety) and have an umami taste that can resemble chicken.

Regular button mushrooms? I slice the stems up along with the caps, can’t tell any difffrence.
