thanks, this looks great
i always wanted to do a bisque but without the heads, and just use the stuffing to make mini meatballs.
i just hate food that you need utensils and still have to use your hands to eat. i like it as eat with your hands or eat with utensils but never both.

Man, I haven't done one since 2020 when we were all locked down. Just may have to do one the next time we boil.

Looks so damned good, but also brings back memories of cleaning hundreds of heads with a designated toothbrush. I know now that I was nothing more than cheap child labor to my mother.

We usually make it when the crawfish go down to $30-$35 a sack. Boil a couple sacks and pick the meat for the freezer.
