Meat grinder/ sausage making questions.

Is a LEM a good grinder?

What size do I need for price sing 5-6 deer a year and various sausage makings?


Any attachments I should look for?


What type of pork fat is best for making hamburger / sausage?

Any other game processing / sausage making appreciated.

No experience with LEM but I own a cabelas .5hp one that I'm very happy with. I don't take 5-6 deer a year, but I would recommend something at least in that power range for what you're looking process.

At that range you're looking at >$300, but don't waste your time with a cheaper model. They will have cheap components and will break with the kind of use you're looking to get out of it.

The one I bought came with the tubes needed to make sausage. There may be some easier add ons out there with different brands, but like I said, I'm happy with mine.

Cabela's .5HP

The one linked is a little different than mine being that mine is about 5 years old now.

Side note: I make my burgers now by purchasing a whole chuck roast and running it through the grinder. Highly recommend.

A foot attachment, on/off control, is very helpful. I think Cabelas makes them that will work on anything, there might be other options out there. Long ago I spent a summer in a meat market and learned a ton. Sausage making is not hard. You can use food grade mineral oil as a lubricant to help the casing flow better when you are filling. We used to keep it in a stray bottle.

If your going to be making sausage include a stuffer in your budget, I'd skimp a little on the grinder and get a stuffer. LEM is a decent brand. If your by yourself or with 1 buddy a .5 horse is plenty big enough.

A stuffer is money well spent. The first time I made sausage I used the grinder to stuff the casing. I will not try that again. The grinder would put air into the casing and blow it off the tube. The stuffer has a vent that keeps allows air to escape.

What kind of sausage are you looking to make?

just used a 6 qt 575w kitchenaid stand mixer to grind up about a 6 pound roast for breakfast sausage. ran back through with 6 pounds of already ground pork. took it like a champ. don't have the stuffer attachment, but the mixer was plenty enough power.

frying up my test patty right now.

I think Martini makes his own deer sausage. Maybe he will chime in. I planned on buying a grinder and stuffer this year rather than spending another $400 on processing.

1 HP and I think I paid about $200.00. I also have a stainless 10lb stuffer. I recommend a stuffer in addition to a grinder. Stuffer about the same price and I grind 5-8 deer or more a year. I also grind a lot of beef.

For under $500 you can get whatever you want to take care of all your grinding and stuffing needs. Mine are about 8-10 years old and they work hard.

What about seasonings? Anyone ever do their own jap/cheddar or steens sausage?

I use Rebel Smoked Sausage seasoning and country sausage seasoning for breakfast party sausage . One pack of the SS will make 100 lbs. They sell all the seasonings and other things you may need to make sausage . I do 2-3 deer a year.

We use Deep South each package makes 25lbs. If we want green onion we add 2 bundles of green onions per 25lbs. It we make jalapeño we put 1 16oz jar of sliced jalapeño per 25lbs.
