Just took my first trip up there and was treated to a Maryland crab steam. As you may know, they are pretty much using the blue crabs from here...but I thought the preparation and taste were incredible. They use beer, vinegar, and old bay to create steam and cook them that way. Then they cake them in more old bay.
The only labor intensive part is that you have to assassinate each crab with a knife before you cook them.

Question for the board: has anyone tried to prepare them this way?
Also, I have a large crawfish pot...what can I do to create a superficial bottom within the basket so that the crabs rest above the water?

Use a brick. I prefer steamed over boiled.

That would push the basket higher than the lid and I'm trying to capture the steam

They aren't immersed in boiling water so I guess the thought is to go ahead and kill them so you don't have a frenzy in there while they steam

I wouldn't bring those along if yet invited to a crab boil down here. My folks would shite if you started smashing crabs. I've never seen it done, but most people down here are way more deliberate in their technique than that.

Then use some crumpled aluminum foil to get the basket where you want. Stupid.

Growing up I thought these things were made for cracking crabs instead of pecans..

That's legit for getting out perfect claw meat. When you eat crabs up the coast they bring out claw crackers and a mallet to smash the crab. I'm not sure how those yankees eat crabs that way.

Another strange fact, they don't eat the females. They think they're gross for some reason.

So you never had she-crab soup? Granted I had it in Baltimore, but that's yankee to me.

Those frickers in MD are the reason it is so hard to get big full crabs down here these days.

Get a smaller basket.

No you don't. Stack them in the basket alive.

I didn't understand that anyway. Wouldn't the 212F steam kill them just as quickly (humanely??? is this the point here???) as 212F boiling water?
