Looking for a solid shrimp grits recipe

I am making shrimp grits for the early crowd at my tailgate. (I will add a few quail to it). I honestly haven't made this before bc I thought it was sort of a contrived dish. We make quail and grits all the time, but I am concerned that the gravy isn't appropriate for shrimp. My plan is to wrap the quail in bacon, brown, remove, then render some andouille is the fat. At that point I am a stuck. Normally I would add trinity, stock, sherry and cook until smooth--then return quail. Most shrimp grits recipes I have seen have a light , blonde roux made with butter. I am worried that it doesn't mesh with what I do with the quail. Looking for thoughts / recipes.

That is how I make mine along with a splash of cream.

I wouldnt see why

would be bad at all with shrimp as well. Sounds very good.

I like to serve mine with a bacon roux (dark roux made from bacon drippings)
