It will be just me and the wife for Thanksgiving this year so the plan is to just cook a few cornish hens along with sides. I have never tried making a spatchcock bird so I am looking for some ideas on marinades, rubs etc. TIA.

Brine them overnight and then grill like you would BBQ'd chicken. Should be quick and delicious.

Cut out the backbone, dry brine, season, roast at 375-425 until 160 internal. Rosemary, thyme, lemon, oregano, etc. would be good for a seasoning.

Why not just do a chicken?
