Lets talk tomatoes...

I have two nice look I g tomatoes, but the are not the same. Which one would you choose?

Choose for what? Did you grow them? Eat them both.

The one on the left is a typical "vine ripend" hothouse tomatoe from the grocery store.

The one on the right is from the local farmers market.

The hothouse tomatoes, while nice looking, are lacking in flavor when compared to the summer tomatoes. The flesh is not as mature and is white with larger cavities.

Looking at the inside the one on the right looks like flavor town.

The one on the left has been gassed to ripen. Can't ship a ripe tomato.

Yep, we always called it "flashed", but same result.

I didn't know anything about gassing or flashing them. I always thought they just picked them early, so that they wouldn't be too ripe by the time they hit the grocery, and that they didn't allow the flesh to ripen completely.

Obviously, the tomatoe on the right is much more flavorful than the one on the left, even though it probably would have been even better if it had been allowed to ripen for another couple of days.

The way they look inside has more to do with the variety of the tomato itself rather than the horticultural practices.

The ones on the left is a globe shaped tomato which is why it has larger spacing and cavities.

The one on the right is a beefsteak shaped tomato, which is why is has more dense fleshing.

The commercial tomato varieties are more concerned with the ability to ship rather than flavor, so that's why most generic store bought tomatoes are firm fleshed tasteless tomatoes.
