Learn me how to cook something down...

Like squirrel, rabbit, hell even fresh sausage. I've never been about to successfully cook something down and make a good gravy. Tell me what to do.

Brown meat
remove meat
add onions, celery, bell pepper and garlic
let that cook a few minutes
add meat back to pot
add stock just to cover meat
bring to a simmer
cover loosely with lid
let it smother for a couple of hours or until meat is tender.

This, although I will add that if you want a little thicker gravy, dust the meat with flour before browning it.
