I have an old 15 gallon I bought from an old black woman in Melville for $100 dollars years ago. She kept it in the yard and cooked cracklings in it for about 50 years. I had an old split rim for a Gulf States Utilies bucket truck and turned it into a stand. I love it but don't use it too often. Makes a killer gumbo. I have a five gallon as well and it will feed about 35. I cheat though. I use parboiled rice because I can cook rice for anything else but regular long grain in jambalaya I can't do to save my arse. So I don't brag. I need to just cook a few small ones to get it right then move up to a bigger pot.

I have the 5 gallon setup from R&R Welding. It's definitely my most prized setup by far.

So in other words, it wasn't well seasoned?
My go-to AP jambalaya guru says he seasons his new pots in a fire. Coat with oil, ash it in the fire, repeat (3-4 times). Said he didn't do it but once inside.

Using the Jambalaya calculator, I know a solo cup = 2 cups of water but I know everyone uses their own rice cup, is that an 8 ounce cup? What's the standard?
